Ingredients:
500g (a little less than a 1lb) beef shank
3 leeks
4 carrots
1 celery
Parsley
Marjoram
Pepper
Juniper
Laurel
Salt
Cut the leeks, carrots and celery and put into pot with 2 litres (~4 pints) of cooking water and the beef shank. Add salt, laurel, juniper, pepper, marjoram and parsley as wished, then simmer at medium level for 3 to 4 hours. This is enough for 3 to 4 portions.
